recipe. Our grandma's "special" is served over chicken.
A light sour cream base, guajillo peppers & herbs give it a
rich and sophisticated taste.
Rajas Poblanas (RAHAS) strips of pacilla chiles, onion,
garlic and sour cream, sauteed over pieces of breast of chicken.
Serrano either pieces of chicken or strips of steak,
sauteed with serrano chiles, sour cream, mushroom, tomato, onions
and garlic.
Tomatillo (chile verde) lean pieces of pork in a tangy
green sauce.
Bistec Ranchero strips of steak, fresh bell peppers,
tomato, cilantro, garlic and onions. Try it with chicken.
Carne Asadaa thin steak, grilled with green onions
& seasoning.
Milanesa a thin steak, seasoned, lightly breaded &
cooked to a golden brown.

tortillas and nueva (chipotle) sauce.
